2 cups corn
2 tbsp. butter
1 sm. onion, chopped
1/2 sm. green bell pepper, chopped
2 tbsp. flour
1/2 tsp. salt
1/2 tsp. paprika
1/4 tsp. dry mustard
dash pepper
3/4 cup milk
1 egg, slightly beaten
1/3 cup cracker crumbs (pref. something like ritz)
1 tbsp. butter, melted

Preheat oven to 350 degrees. Heat 2 tbsp. butter in saucepan over medium heat. Cook onion & bell pepper about 2 minutes until onion is softened. Remove from heat. Stir in flour, salt, paprika, mustard, and pepper. Cook, stirring constantly, until mixture is bubbly. Remove from heat. Gradually, stir in milk. Heat to boiling, stirring constantly. Boil & stir for one minute. Stir in corn and egg. Pour into ungreased 1 quart casserole. Mix crumbs and 1 tbsp melted butter. Sprinkle on top. Bake uncovered 30 to 35 minutes, until bubbly.
