slice up the peppers multi color – red, yellow, and/or orange (one of each to = 2 altogether)

break up the sausage into chunks (remove from casing), brown it, take it out of the pan

add sliced peppers

add tomato paste (1 can + 1can of water), dry herbs (italian blend – rsemary,sage, thyme about 2 Tablespoons), 2-3 cloves of  garlic mashed

simmer for about 15 mins

add sausage back to the pan, simmer on low for about 15mins, salt to taste.

Good on the first day, even better reheated.   Serve with some crusty Italian garlic bread.
