1 c. plain couscous
1 1/2 c. chicken broth
1 1/2 T. butter
1/2 c. dried currants or dried cherries
2/3 c. chopped scallions
1/2 c. chopped pistachios
4 T. minced parsley

Dressing:
3 T. fresh lemon juice
pinch cinnamon
6 T. olive oil

Using couscous, broth and butter, follow directions on back of box to cook. Once cooled off a bit, add currants, scallions, pistachios and parsley.

Mix together dressing and pour over couscous. Serve hot or cold. (I like it better cold)
